Celebration Weekend!

This weekend has been FANTASTIC!  And there's still one day left before it's back-to-work time!  Let's begin the recap:

Friday:  normal work day (blah blah blah) but then it was out to birthday celebration dinner with some friends!  Brittany, one the Fab 4, had a birthday on Thursday.  A small group of us went out to dinner and then got some ice cream.  I am so blessed to have such great friends!

Saturday:  Mr. H and I completed our home gym project!  We now have a power rack, barbell set, and fully adjustable bench all in our garage.  No more excuses about not making it to the gym, huh?  We both did a light workout and we are SORE today.  The good kind of sore.  The I-actually-did-something-good-for-my-body kind of sore.  It's awesome!!!


After some relaxing, Mr. H made a delicious dinner that he called "Fajita Pita."  He cooked some fajita seasoned chicken in one skillet and some green peppers and onions in another.  He season the veggie mixture as he went and it was delicious!!  Combine the two together, stuff it in some pita bread, top with cheese and ENJOY.  Yummmmmm.  It was so good and pretty darn healthy too. 

After Fajita Pitas we embarked on a fun new adventure--homemade root beer :)

Step 1:  Fill an insulated cooler (preferable one with a spout) with 3 1/3 gallons cold water.

Step 2:  Mix in 6 cups of sugar (or use half sugar half splenda).  Mix with a large spoon until the sugar is completely dissolved.

Step 3:  Add 2 oz of root beer extract.  Stir until combined.

Step 4:  Put in about 4 lbs of dry ice...and watch the mixture bubble just like a creepy Halloween cauldron.  It makes this crazy boiling noise--we really thought it was getting ready to end up all over the floor!

Step 5:  Cover and seal, but not completely or too much pressure will build up and potentially dangerous things could occur.  Yikes!  Ours took about 1 hour for the entire dry ice block to dissolve.  Whenever it's dissolved, enjoy some delicious root beer.  Then remember to seal the container so your wonderful concoction doesn't turn flat.

Yep, are you jealous now?!  Go make some!  It's super easy and lots of fun  :)

Not a root beer fan, but your instructions and illustrations were nice!

I am so excited about the root beer!!!! thank you for the photos and recipe, plan to try that next weekend!!! Sharon is more likely to want Mr. H's recipe for fajita pitas!
